All EXAU oils are extracted from the first milling of the olive fruit through mechanical means (without the use of chemicals) and with limited heat.
In addition, our extra virgin olive oils must meet certain chemical and organoleptic parameters.
How We Produce Our Italian Olive Oils
At EXAU we exclusively produce Italian extra virgin olive oil from olives grown in beautiful Calabria, south Italy where they benefit from the mediterranean weather, their native climate.
Each fall we harvest our olives, milling them within 8 hours of picking to ensure the highest quality product. The result is a delicious extra virgin olive oil in the hands of very happy customers!
