We do! Our founders grow olives in Calabria, Italy. Each year we harvest and mill the fruit into premium Italian extra virgin olive oil. In shortages we source fruit from family owned farms in Calabria.
We exclusively work with fruit grown in Calabria, Italy. We also only work with small, family owned businesses.
We use a modern stainless steel mill for our Italian olive oils. The oils are filtered to remove particles, maintain quality, and create a shelf stable product.
EXAU is PESTICIDE FREE. We practice regenerative farming (organic farming methods) and work with an agronomist PhD. All of our growing partners are certified organic in the EU.

sensory + lab tests
Giuseppe and Skyler are level 2 sommeliers (AMEDOO) and taste every oil to ensure its of the highest quality.
All of our oils are sent to a university in Calabria for full lab analysis. The free fatty acid is always below 0.3% while polyphenols are always above 600 mg/kg.
All of our oils are certified EFSA (European Food Safety Authority) which means the antioxidant levels and therefore the health benefits are higher than usual. This allows us to make additional health claims and that our products are better for you than other run of the mill olive oils.
EXAU's products are antioxidant rich which helps protect the body’s cells from damage caused by harmful free radicals, reducing inflammation and the risk of chronic diseases. Antioxidants also contribute to heart health and enhance the products stability and shelf life.
