Tomato Toast Recipe

This tomato toast was way too beautiful to not receive its own dedicated post and mini recipe. Is it breakfast, a snack, or technically bruschetta? How about today we skip labels and enjoy life.

Putting The Toast Together

This toast is composed of bread, ricotta, and slightly blackened roasted tomatoes. Make sure the ricotta is fresh and creamy. Also, before assembling this toast make sure all ingredients come to room temperature first. It also helps if the toast is nice and hot (or should we say toasty?).

  • 1 large piece toast (sour dough or whole wheat is great)
  • 2 tbsp ricotta
  • 3 tbsp roasted tomatoes
  • 1 tsp extra virgin olive oil (optional)


  1. Allow ricotta and roasted tomatoes to come to room temperature.

  2. Toast the bread.

  3. Generously spread a layer of ricotta onto bread.

  4. Top with roasted tomatoes.

  5. Finish with extra vrign olive oil if desired. Enjoy!
